Last night for dinner I created a simple yet delicious little masterpiece, a Rasberry & Brie Panini. The ooey gooey goodness of the warm brie cheese, combined with the sweetness of the raspberries and honey made for a perfect meal! I paired it with a side of fresh leafy greens and oil & vinaigrette salad.

To make it yourself you will need the following:

- Belgian or crusty French bread
- Butter
- Brie
- Raspberries
- Honey

Butter two pieces of bread. Flip the bread over as the buttered side will become the outside of the sandwich. Place slices of brie on one piece of bread. Crush some fresh raspberries on the other and a drizzle of honey on top. Place the sandwich on a preheated panini press and cook for just a few minutes or until crispy and golden brown on the outside. Allow to sit for about 5 minutes before cutting and serving. I don’t have a panini press so I simply grilled it like a grilled cheese sandwich and it worked like a charm! If you don’t like raspberries I think any berry or a green apple would work perfectly too!
